Light Toast

Medium Toast

Vanilla, coffee, sweetness, erasing of bitterness and excessive astringency and vegetal character.

 

Medium Plus Toast

Roasted,toasty aromas, coffee, caramel, sweetness, length on the palate.

 

Heavy Toast

Roasted smoky aromas, dark coffee, sweetness, persistence.

Effects vary according to grape variety, wine making techniques and aging, dose rates and contact time.  One stick for 5-6 gallons, Good for two seasons, when done with the season’s wine keep the wood wet and scrub with a stainless steel (sanitized) brush; keep wet and double wrap with plastic stretch wrap and freeze. Thaw and put in the next wine. This will give 2nd season barrel type extractions and flavors. (You can cut them in down to change the ratio of wine to wood as one stick gives the flavors and complexity as a New Barrel will). You can store a unused piece of wood in the O2 barrier packaging they are packaged in.

American Oak Species have a greater aromatic potential than European Oak due to the high content of cis/trans isomers of methalOctalactone. American White Oak is easily identified by the low quanity of extractable polyphenols, the high methal-octalactone extractable polyphenols, the presence of two isomers of 3-oxo-retro-ionol.**
